Today, we are beyond honored to add three new incredible chefs to our growing team of culinary professionals who will all be contributing a recipe to our cookbook.
Carrie Baird, Alison Roman and Evan Hanczor
Carrie Baird | As a season 15 Top Chef finalist, Carrie quickly became the crowd favorite with her classic Colorado cooking. Carrie is the Executive Chef / Partner at Bar Dough in Denver, Colorado and studied culinary arts at the prestigious Le Cordon Bleu. She focuses on sustainable and responsibly sourced foods and works closely with local farmers and ranchers to develop her menus. She gave us some hints to what she is going to make with our flours, and we know it's going to quickly become your favorite go to recipe!
Alison Roman | Alison is one of the hottest names in food today with her much talked about "Dining In" cookbook, that Goop calls, "Drool-worthy yet decidedly unfussy food." A former Bon Appetit Editor, Alison recently joined the New York Times as a food columnist. We are proud to not only have a delicious Alison Roman recipe in our cookbook, but to also count her as one of our advisors (that's right, we've been consulting Alison on crickets as far back as 2015).
Evan Hanczor | Widely recognized for his commitment to sustainable agriculture at his lauded Brooklyn restaurant, Egg and Catskills farm, Evan is also the winner of the Rising Stars Award by Star Chefs. Evan is also a cookbook co-author and avid reader and poet. In addition to Evan's contribution to our cookbook, you can also get excited for another delicious collaboration that we're cooking up for later in the year (and guess what, you're invited!).
Plus, if today couldn't get even better, Bon Appetit Magazine stopped by De Maria to check out Chef Adriana Urbina's Spiced Plantain Cake made with our Gluten-Free Cricket Powder. It is on the menu now at her NYC-based restaurant and almost looks to beautiful to eat.

Our team is still glowing from all your incredible support yesterday! We sailed past our goal in just 7 hours! Now we’re dreaming bigger and can't wait to share our new stretch goals with you (these will also be listed on the campaign page).
We are now trying to raise $50K!
If we reach our new goal of $50K, we will be able to distribute our flours to more stores across the country and extend our collaborations with chefs! We want to bring you the absolute most inspiring and tasty foods with crickets and we want our products to reach you wherever it is that you live!
